I adapted this recipe I discovered from Ekaterina Lochoshvili-Griffin from Demark her 5 year old son was diagnosed with Type 1 diabetes in the year 2000 read her story here also here is her Facebook page you can like and follow.
This Bread is so amazing and is a fantastic keto friendly alternative to bread.
Low Carb Bread Rolls
- 2 cups almond meal
- 1/4 cup linseed meal
- 1/4 cup sesame seeds
- 1/4 cup pumpkin seeds
- 1 tbsp poppy seeds
- 2 tbsp psyllium husk powder
- 1 tsp pink himalayan salt
- 1/2 tsp baking powder
- 3 tbsp coconut oil
- 3 Eggs
- 1 cup boiling water
Blend the Ingredients
- Combine all ingredients in food processor and give a quick blend then add 1 cup boiling water and blend for a few minutes until combined into a sticky dough.
Shape Rolls
- With wet hands take mix and shape into 6 rolls on baking paper and garnish with some Sesame seeds on top.
Put in oven
- Place in pre-heated 175 C oven for 45-55 min and Enjoy they can be frozen and used for bread rolls great with Vegemite and butter and very filling.
